I enjoying making this dish. This is a relative easy dish to make but some people may feel that it is really complicated. I will walk you through all the steps. First are the ingredients.


12 oz raw shrimp
1lb smoked sausage sliced
8oz okra chopped
2 ribs of celery chopped
1 large onion chopped
14.5 can of diced tomatoes with chilies
1 large bell pepper chopped
6 tablespoons flour
7 tablespoons vegetable oil
2 tablespoons of gumbo file
2 cloves garlic
32 oz of chicken stock

Saute the okra in 1 tablespoon oil. Saute for about 3-4 mins. Set aside.

Now you need to make the roux. Take a saute pan and the remaining 6 tablespoons of oil and the 6 tablespoons of flour. Take this and place over a low to medium heat and stir constantly until the mixture is a medium or dark brown. It had burned if you have black spots in it. You would need to start over.

After the roux is done, set this aside. To the pot that has the okra add the onions,celery and garlic. You can add another tablespoon of oil so that the vegetables will not stick. After this cooks for a few minutes add the roux so that all the vegetables are covered.

Next add the can of diced tomatoes, chicken stock, smoked sausage and bell pepper.

Let this cook for about 30 minutes. Add the shrimp in the last 4-5 minutes of cooking.
Last but not least add the gumbo file. You add this last because adding it earlier will make this stringy.

  1. I forgot to add that you serve over rice.
    I prefer to use jasmine rice.
    This just adds another layer of flavor.
